Here is the history for the Covenant.

Covenant history is somewhat of a mystery. What is known is that their view of time is broken up into "Ages".

Current known "Ages" are:

The Age of Abandonment

The Age of Conflict

The Age of Reconciliation

The Age of Discovery

The Age of Conversion

The Age of Doubt

The Age of Reclamation
There appears to be multiple Ages in each section, such as the "First" Age of Reconciliation, and the "Ninth" Age of Reclamation.

It is unknown exactly how many Ages exist in Covenant lore.

The Age of Abandonment

The Age of Abandonment is theorized to be the Age in which the Elites, or Sangheili, and the Prophets were at war with each other. It appears that their war came to a close with the finding of Forerunner artifacts and the first steps of the creation of the Covenant took place.

The Age of Conflict

The Age of Conflict is theorized to be the the Age in which the two members of the Covenant, the Elites and the Prophets began their war on other species, in search of more Forerunner technology.

The Age of Reconciliation

The First Age of Reconciliation saw the creation of the Covenant Writ of Union, the binding contract that would hold the Covenant together. During this Age, many of the current Covenant client races either joined, or were subjugated by the Covenant.

The Age of Discovery

The Age of Discovery appears to be the time when the Covenant began actively searching for Forerunner technology. It may also be the time in which the Covenant invented many of their techologies which were based on the artifacts which they found.

The Age of Conversion

Little is known about the Age of Conversion, but it could possibly be the Age in which the Covenant discovered the Halo fortress worlds.

The Age of Doubt

Little is also known about the Age of Doubt. It has been speculated that the Age of Doubt is the period of history when the Covenant discovered that they could not activate the rings without a Reclaimer. It may also be the period in which the Covenant first encountered the Oracles, or Monitors, of the Halos.

The Age of Reclamation

The Ninth Age of Reclamation is the current Age in which the Covenant now find themselves. This is the Age in which the destruction of the first Halo took place. They nearly began their Great Journey by activating the Delta Halo, if it had not been for the intervention of UNSC forces.
